· 1 packet Dixie Fixins Vermont Maple Bacon Dip Mix, dry
· 3 pounds sweet potatoes, peeled and cut into 1-inch cubes
· 3 tablespoons olive oil
· 3 tablespoons pure maple syrup
· 2 tablespoons melted butter
· 6 slices bacon, cooked and crumbled
· 1/3 cup chopped pecans, optional
· 1 tablespoon chopped fresh parsley, optional
Directions
1. Heat oven to 425°F. Line a large rimmed baking sheet with parchment paper.
2. Place the sweet potatoes in a large bowl. Add the olive oil and dry Vermont Maple Bacon Dip Mix; toss until evenly coated.
3. Spread the potatoes in a single layer. Roast for 25 minutes, turning once.
4. Whisk the maple syrup and melted butter together. Drizzle over the potatoes and toss gently. Add the pecans, if using.
5. Return to the oven for 8 to 10 minutes, until the potatoes are tender and caramelized around the edges.
6. Transfer to a serving bowl and sprinkle with bacon and parsley.
DIXIE FIXINS TIP: Do not crowd the baking sheet. Use two pans when necessary so the sweet potatoes roast and caramelize instead of steaming.
STORAGE: Refrigerate in a covered container for up to 4 days. Reheat in a 375°F oven or air fryer for the best texture.
