Juicy watermelon, chilled shrimp, cucumber, lime, and cilantro create a bright sweet-heat appetizer served in crisp lettuce cups.
Ingredients
1 packet Dixie Fixins Jalapeno Watermelon Dip Mix, dry
1 pound cooked medium shrimp, peeled, tails removed, and chopped
2 cups seedless watermelon, cut into small cubes
1 cup cucumber, seeded and diced
1/3 cup finely diced red onion
1/3 cup chopped fresh cilantro
1/3 cup fresh lime juice
2 tablespoons olive oil
8 to 10 butter-lettuce leaves
Lime wedges for serving
Directions
Whisk the dry Jalapeno Watermelon Dip Mix, lime juice, and olive oil in a large bowl.
Add shrimp, watermelon, cucumber, red onion, and cilantro. Fold gently until evenly coated.
Cover and refrigerate for 30 to 60 minutes.
Drain off excess liquid if necessary. Spoon the mixture into lettuce leaves and serve with lime wedges.
