Tender turkey meatballs coated in a glossy sweet-and-spicy glaze are tucked into crisp lettuce with cucumber, carrot, green onion, and sesame seeds.
Ingredients
Meatballs
1 packet Dixie Fixins Sriracha Sweet Heat Mix, divided
1 pound ground turkey
1/2 cup panko breadcrumbs
1 large egg
2 tablespoons sliced green onions
1 teaspoon toasted sesame oil
Glaze and Wraps
1/3 cup honey
1/4 cup low-sodium soy sauce
2 tablespoons rice vinegar
1 teaspoon cornstarch mixed with 1 tablespoon cold water
8 large butter-lettuce leaves
1 cup shredded carrot
1 small cucumber, thinly sliced
2 green onions, sliced
1 tablespoon sesame seeds
Directions
Heat oven to 400°F. Line a rimmed baking sheet with parchment paper.
Combine turkey, panko, egg, green onions, sesame oil, and half the dry Sriracha Sweet Heat Mix. Shape into 20 small meatballs.
Bake for 15 to 18 minutes, until browned and the centers reach 165°F.
Meanwhile, combine honey, soy sauce, vinegar, and remaining dry mix in a skillet. Bring to a gentle simmer. Stir in the cornstarch mixture and cook for 1 to 2 minutes, until glossy and thickened.
Add the cooked meatballs and toss to coat.
Fill lettuce leaves with carrot, cucumber, and meatballs. Top with green onions and sesame seeds.
