Razzberry Chipotle Pot Roast
Ingredients
3 lbs pork roast (pork loin or tenderloin works well)
1 packet Dixie Fixins Razzberry Chipotle Seasoning Mix
Salt and pepper to taste
Instructions
Prepare the slow cooker: Place the pork roast in the base of the slow cooker.
Season the roast: Season the pork with salt and pepper, and sprinkle the dry Dixie Fixins Razzberry Chipotle Seasoning mix over the top, patting it in gently. I will also mix Dixie Fixins Razzberry Chipotle Seasoning with two blocks of cream cheese and rub onto the pork roast. This is the method my husband likes best!
Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the pork is tender and cooked through. The internal temperature should reach 145°F (63°C).
Rest and serve: Remove the pork from the slow cooker and let it rest for about 10 minutes before slicing or shredding. Serve with the remaining sauce from the slow cooker.
Alternative: Oven/Skillet Method
For an oven-roasted version, sear the seasoned pork tenderloin in a large ovenproof skillet over medium-high heat for about 3 minutes per side. Then, rub 1 packet of Dixie Fixins Razzberry Chipotle Seasoning mixture and transfer the skillet to a preheated oven (around 425°F) for 10-15 minutes until it reaches the proper internal temperature. Let it rest before serving with warmed sauce.
This dish pairs well with roasted sweet potatoes or carrots. I also enjoy this with cranberry sauce.
